Paola Ortesta is a cook rooted in Puglian traditions, turning local ingredients into dishes that express place and memory. At La Cuccagna – Giro di Vite, the longstanding restaurant in Crispiano, she brings together Mediterranean cooking, local produce and a light touch in the kitchen.
Self-taught and inspired by family experience, Paola believes a dish should appeal to the eyes before it reaches the palate. Seasonal vegetables, wild herbs and Puglian ingredients are central to her cooking.
