“For more than fifteen years, our vineyards have grown among wild plants and animals, giving us whole, ripe or overripe grapes in harmony with the village’s six terroirs, worked by earlier generations.
We prune late, do not cultivate the soil or add amendments, and use low doses of copper, sulphur and fenugreek. Ground cover is rolled or mown just before harvest. Foliage is preserved and shoots woven together rather than subjected to green pruning. Grapes are collected in small crates, pressed slowly and fermented spontaneously.
The wines reflect a succession of living processes, from soil life to indigenous yeasts, without deciding their balance in advance. Between permaculture and non-intervention, we share experiments and emotions through a broad range: organic wines, neither filtered nor given added sulphites, including at bottling.”
