Mervič – JNK is a small family winery in Šempas, Slovenia, specialising in orange, or skin-contact white, wines. Its 3.5 hectares of vineyards lie on marl and clay soils at elevations of 100–350 metres. South- to south-east-facing slopes with gradients of 30–45% benefit from a meeting of cool northern air and mild Adriatic winds, supporting aromatic wines with acidity and mineral character.
White varieties include Ribolla, Chardonnay, Jakot (Friulano), Pinot Bianco, Malvasia and Sauvignon. Sveti Mihael blends Sauvignon, Pinot Bianco, Ribolla and Malvasia, while Vitovska is a more recent addition. The reds include Cabernet Sauvignon, Merlot and a blend of the two.
The vineyards are certified organic and yields are kept low. Grapes are carefully selected and harvested by hand. White wines spend three to fourteen days on their skins, with Ribolla reaching fourteen days; reds macerate for forty to sixty days. The wines mature on their lees in oak for one to two years, followed by at least a year in bottle, giving them the potential to age.
JNK’s guiding conviction is that outstanding wines begin with exceptional grapes. Careful work and respect for nature’s timing support an uncompromising pursuit of quality.
