I CA RO is a small project to rediscover the Castelli Romani. Rocco, Luca, Gianmarco and Fabio, four friends from Rome, work with two determined farmers to give a voice to the grapes and wines of this volcanic landscape.
Their approach is natural, accessible and deliberately unpretentious: bringing the wines of the Castelli back to Rome in a simple, direct way. They want to build a network of people, growers, wine shops and venues who share the idea—and enjoy doing it.
Grapes come from a farm near Velletri. A north-east-facing, pergola-trained hectare planted in 1991 supplies Malvasia di Candia and Trebbiano; another hectare trained to Guyot supplies Nero Buono. The volcanic soils combine clay and a little pozzolanic sand in a tuff-rich landscape.
The growers describe using propolis and molasses preparations, the latter to attract insects carrying yeasts. Copper, sulphur and zeolite are used as needed, with zeolite intended to reduce copper use. They avoid herbicides and intensive treatments.
Harvesting is by hand into 20 kg crates. Fermentation begins spontaneously in 20–30-hectolitre fibreglass vessels and two 800-litre amphorae. There is no filtration, fining or temperature control, and intervention is limited to what is necessary. Only a very small amount of sulphite is added before bottling; bottling and racking follow lunar cycles.
I CA RO shares the vision of Evoluzione Naturale. Come and discover their stories and wines.
