Horst Hummel founded Hummel Winery in 1998 at Villány in south-western Hungary, close to Croatia. Its aim is to express local terroir through environmentally respectful farming.
Approximately 2.5 hectares of owned vineyards grow Portugieser, Merlot, Hárslevelű and Furmint. Organic principles were adopted in 2008 and biodynamic practices in 2016, developing into Hummel’s Natural Synergetic Winegrowing approach. Spontaneous fermentation and minimal additives support the expression of soil and climate.
Whites ferment on their skins and mature on lees in tanks or used barriques. Reds ferment in open vats with gentle extraction, followed by maturation in barrels of different origins.
