Ulrike Filp and Robert Bormuth founded Feldtheorie in Austria’s Kamptal in 2022. Their journey into wine began by chance in New Zealand, where meeting the owners of Maori Point sparked a new passion. With backgrounds in chemistry and physics, they left academia and gained experience at organic wineries in Germany, Australia and Austria.
Their work rests on the belief that wine quality begins in the vineyard. They farm 3.5 hectares of old vines organically, working by hand and using cover crops to support healthy soil. Winemaking is restrained, with spontaneous fermentation and no additives apart from small amounts of vitamins and sulphites.
The name Feldtheorie refers to field theory in physics and reflects their philosophy: each sip conveys the story of the soil, climate and farming behind it.
