Cascina degli Ulivi has belonged to the Bellotti family since 1930. When Stefano, then just eighteen, decided that his future lay in the hills of Monferrato and the rural world he loved, he set the estate on a new course: making wine ‘without oenology’.
From the first hectare of vines to the estate’s twenty-two hectares, Stefano fought many battles against what he saw as a misguided modernity and farmers’ dependence on the chemical and pharmaceutical industries. To the end, he never regretted the organic — or, more simply, ecological — choice he made in the 1970s: wines without artifice, simply wines.
