“In the vats, the beast shakes off its sugars and gives birth to alcohol. The skins gather at the edges, laying siege with polyphenols; a tannic infantry rises from the stems as if from trenches. The amphorae breathe: their terracotta bellies have swollen to shelter the grapes’ hibernation.
Air sifts through the presses lined up beneath the spiders’ trail, then slips away to oxygenate the barrels. An airlock whistles at the far end, breaking the stillness from its fibreglass minaret. As the equinox folds away the carapace of light, sprites in the corners of the cellar devote themselves to indigenous yeasts.”
