Paolo Barillari spent years packing only the essentials, leaving room for what each new experience might bring. Harvest after harvest, from France’s hills to Australia’s sunny valleys and New Zealand’s rugged coast, he discovered what he loved: travelling while making wine.
Cacciatore d’Uve grew from that curiosity, stronger than the fear of the unknown. Encounters with different landscapes and cultures brought knowledge, laughter, friendships and lasting memories. The grape pierced by an arrow became a symbol of those journeys, lessons, successes, setbacks and dreams.
The first ‘hunt’ began in 2019 in the Colli Euganei, ancient volcanoes now forming distinctive, richly vegetated hills. Paolo seeks an artisanal spirit without rigid rules. Each bottle begins with the search for remarkable vineyards and knowledgeable growers, followed by hand harvesting and spontaneous fermentation.
His aim is to capture the character of grape and place using what nature provides. The original passion has become something larger, and he hopes there will always be room left in that suitcase.
