Ama Ama Pet Nat is a Basque project making artisanal kombucha: fresh, gently sparkling fermented teas with a low alcohol content. Led by Dani Lasa and Ramon Perisé, a team of chefs, craftspeople, scientists, winemakers and tea expert Henrietta Lovell began experimenting in a garage in San Sebastián.
Production centres on a SCOBY, a symbiotic culture of bacteria and yeasts that ferments carefully selected teas and herbs. Organic ingredients and low-mineral spring water from the Basque mountains help preserve the character of the infusions. Depending on the recipe, fermentation takes between one and three weeks.
Complex and versatile, these low-alcohol drinks can be served as aperitifs, used in cocktails or paired with food. Ama Ama Pet Nat and Callmewine, which presents the project in Italy, share the values of Evoluzione Naturale, bringing a fresh perspective to fermentation and contemporary drinking.
